Sample Menu

Theses selections merely a sampling of Bon Appetit! Personal Chef Service. As your personal chef, I will provide you with customized menus and new selections that I think will appeal to you. All meals are prepared to your taste specifications, food allergy requirements and dietary requirements including low-fat and/or low-sodium diets.

Each entrée comes with an appropriate side dish such as a seasonal vegetable, potato, rice, pasta or grain, salad, quick bread, bruschetta or simple soup.

Beef, Pork and Veal

Apple Meatloaf with Five Spice Glaze
Wonderful meatloaf flavored with fresh apples, onions and spices. Topped with a seductive  apple five spice glaze.

Beef and Vegetable Kebabs
Sirloin tips are skewered with fresh vegetables and marinated in a savory blend of spices and herbs and then oven roasted.

Beef and Vegetable Pot Pie
Individual pies are made with caramelized beef cubes, peas, carrots and pearl onions. Covered with a puffed pastry crust and baked to perfection.

Petit Filet Au Poivre
Peppercorn crusted 4oz filet expertly seared with a light Madeira butter sauce.

Short Ribs Provencal
Falling-off-the bone goodness with onions, carrots and red Zinfandel sauce served with crème fraîche mashed potatoes

Veal Scaloppini
Veal medallions sautéed with mushrooms in a Marsala wine sauce

Veal with Leeks
A wonder dish of tender veal cutlets, served with a leek and lemon sauce and rice

Classic French Pork Roast
Tenderloin oven roasted and served with wild rice. Brandy soaked prunes and apricots are sautéed in a shallot butter broth.

Pork Chops and Brown Sugar Bourbon Sauce
Thick center cut pork chops are pan roasted and finished with a deglazed bourbon and brown sugar sauce accented with shallots and garlic.

Pork Medallions with Dijon
Pork medallions lightly sautéed in butter, shallots and mushroom accompanied by a creamy Dijon mustard sauce and with rice

Pork Kebabs
Pork loin chunks are marinated with pineapple juice, cinnamon, nutmeg and cayenne pepper. Oven grilled with apples and pineapples on a bed of scented couscous.

Poultry

Tetrazini
A comforting light and creamy concoction of diced chicken or turkey, mushrooms, celery and linguine, baked casserole style with a butter breadcrumb topping.

Chicken Pot Pie
Home-style filling with fresh vegetables simmered in creamy veloute sauce and topped with a flaky pie crust.

Chicken and Sausage Jambalaya
New Orleans classic dish made with diced chicken and chorizo sausage. Blended with vegetables and     special herbs and spices. Served with fresh cilantro and scallion rice.

Chicken Cacciatore
Hunter style Italian stew with tomatoes, peppers, onions red wine and fresh oregano. Served over pasta or rice.

Chicken and Vegetable Kebabs
Plump chicken and select vegetables are marinated with tangy lemon, garlic and mint. Ready for the grill or oven roasted for you. Served with Greek tomato, onion and feta salad and Orzo.

Chicken Picatta
A classic Italian dish made with chicken dusted in seasoned flour and carefully sautéed. Finished in a lemon caper butter sauce made with white wine.

Chicken Pad Thai
Thai dish made with carrots, snow peas, shitake mushrooms, peppers and onions. Finished with chopped hard boiled egg, scallions, roasted peanuts and a chili peanut and soy sauce over noodles.

Jamaican Jerk Chicken
A wonderful marinade made with Caribbean spices makes this a unique, fiery and delicious dish.  Tamed with mango-papaya salsa and cilantro rice.

Stuffed Chicken
Tender fresh chicken breasts stuffed with lemon garlic spinach, roasted red peppers and goat cheese, served with a pesto cream sauce.

Half-Chicken with Oyster Dressing
Just as the title states— a roasted half chicken is served with an oyster cornbread dressing and gingersnap gravy. Simply divine.

Pepper Chicken Fomage
One of my most requested meals. Shredded chicken, green peppers, onions, green chilies or jalepenos and Cajun seasonings in a creamy pepper jack and cheddar cheese sauce over penne.

Pasta

Grown Up Mac and Cheese
Definitely NOT from a box! Made with fresh cheddar cheese and select seasoning that make this one of the all time American favorites.

Baked Rigatoni
A delectable red wine infused marinara with Italian sausage, peppers, onions and garlic tossed with rigatoni pasta and cheeses, then baked until golden brown.

Classic Bolognese
A rich ragu of beef, Italian sausage, carrots, onions and celery simmered in red wine, spices and crushed tomatoes.  Your choice of bucatini or spaghettini.

Classic Pesto
Fresh basil, garlic, pine nuts, pecorino Romano cheese and olive oil are blended in this iconic sauce.       Best over penne or linguine.

 Spaghettini ala Spoletto
. Spaghetti  tossed with olive oil, garlic, fresh basil, sun dried tomatoes and pine nuts.

Roasted Vegetable Lasagna
Hearty vegetarian dish. Oven roasted vegetables nestled between layers of pasta and ricotta in a fresh marinara sauce.

Pasta Rotolo
Pasta served jelly roll fashion is wrapped around a delicious spinach and prosciutto filling surrounded by a Béchamel and Tomato Sauce.

Broccoli and Anchovy Sauce
Orecchiette  the natural match for this earthy broccoli sauce made with fresh broccoli florets, anchovies, garlic and olive oil. Top with toasted pine nuts and parmesan cheese.  Delicious with the addition of grilled chicken tenderloins.

 Seafood

Maple Thyme Glazed Salmon
Salmon is slow roasted in a buttered olive oil then finished with a maple glaze mix made with Dijon mustard, thyme, brown sugar and horseradish cream

New England Baked Cod
Fresh cod is topped with traditional Ritz cracker topping with lemon zest, black pepper and fresh chopped parsley. Finished in the oven with a dollop of butter.

Pistachio Topped Halibut
Pistachio crumb topping makes this dish subtle yet full of flavor. Pan seared and finished in the oven       until perfect.

Citrus Glazed Swordfish
Grapefruit and lime juice marinated swordfish steaks are seared and finished in the oven with soy sauce,
Garlic and ginger. Glazed and served with scallions.

Classic Salmon Croquettes
An oldie but goodie. Salmon croquettes are made with green onions and Old Bay seasoning. Lightly pan fried with a  crumb crust and served with creamed new potatoes and peas.

Sicilian Tuna with Couscous
Fresh tuna steaks are oven roasted and served atop an Italian style couscous with tomatoes, olives, capers and white wine.

Scallops with Spinach Fettuccine
Succulent scallops are combined in a light creamy garlic sauce over spinach fettuccini.

Baked Scallops
Sea scallops are baked in a light lemon sauce with a pignoli breadcrumb crust.

California Shark Tacos
Tequila and lime marinated shark steaks or other firm flesh fish served with corn tortillas and mango salsa

Salmon in Puff Pastry
Fresh salmon topped with rice and mushrooms is encased in s puffy pastry shell and served with a lovely dill sauce.

Main Dish Soups and Salads

Beef, Barley and Mushroom Soup
Main dish with beef, pearl barley, and portabella mushrooms in savory sauce.

Cheddar Cheese and Potato Soup
Russet potatoes with scallions and bacon in a cheddar cheese and white wine broth.

Classic Gazpacho
A chilled soup with chopped fresh tomatoes, peppers, celery, tarragon, and tomato juices.
Even heartier with jumbo shrimp

Texas Tortilla Soup
A Texas favorite with plenty of chicken in a southwestern spiced chicken stock. Top with blue corn tortilla strips, avocado, sour cream and cheddar cheese

Beef Stew
Roast beef , slow cooked in a red wine-infused beef gravy and carrots, pearl onions and potatoes. Topped with fluffy apple dumplings.

Asian Chicken Salad
Roast chicken, red and green bell peppers and mango on a bed of fresh spinach leaves.
Topped with delightful a Asian vinaigrette, sesame seeds and peanuts.

Blackened Portabella Mushroom Salad
Blackened portabella mushrooms, red onions and canella beans over baby greens drizzled with a balsamic, honey and Dijon mustard vinaigrette.

Salmon and Tortellini Salad
Poached fresh salmon, tortellini, artichokes, kalamata olives and sun-dried tomatoes with a Feta cheese, red wine vinegar and Dijon mustard  dressing

Fattoush
Middle Eastern Bread Salad. Savor cucumbers, tomatoes, radishes, yellow peppers, parsley, Feta Cheese  and lemon juice. Toasted pita bread accompanies

Beef and Pasta Salad
Marinated roast beef, ziti,  red and yellow bell peppers and snow peas in a lovely Italian-inspired dressing.
